A Dorset chef is set to take up a residency at an award-winning London restaurant to share the flavours of the Dorset coast.
Harriet Mansell, owner of restaurants Robin Wylde and Lilac in Lyme Regis - both of which are featured in the Michelin Guide, is heading up to Carousel restaurant in Fitzrovia from February 28- March 4.
This week-long takeover will feature a tasting menu and wine tasting and Harriet is excited to be able to take her Robin Wylde menu to central London.
Harriet previously spent years working on yachts as a private chef and later returned to South West England, where she grew up, opening Robin Wylde to critical acclaim in 2020 following her time at Lyme-Regis pop-up. After it became an instant hit, its sustainably-minded sister, restaurant and wine bar Lilac opened a year later.
The two eateries aim to celebrate the diversity and abundance of wild West Country produce and Harriet is a passionate advocate of the region’s peerless seafood and its array of locally grown ingredients, from edible sea herbs to the fruits and berries.
The chef takes inspiration from the natural world, with pickling, preserving and fermentation playing a prominent role in her artful approach to extracting every bit of flavour from her chosen ingredients.
Robin Wylde offers a seasonal and local celebratory tasting menu featuring a snapshot of the finest produce from the area, carefully sourced and gathered, and explained to visitors over the course of the evening.
Carousel is a London based restaurant which showcases an ever-changing line-up of talented chefs with a new guest chef joining them every week.
